I’m starting a new blog feature where I will post the junky, disgusting garbage I’m making instead of hiding it away in shame.
Inspired by my success with cookie crumbs in last week’s post – and with my cabinet still stocked with leftover Halloween cookies – I decided to see how they would work in place of flour in a pseudo-pancake recipe. (It’s probably more pancake than omelette.)
Surprisingly…good. I probably would not serve this to a guest, but it’s passable for those lonely nights when sugar is my only friend.
1 tbsp milk
1.5 tsp honey
dash of vanilla
~6 cookies, depending on the size
1 tbsp chocolate chips
spoonful of peanut butter

Mix the egg, milk, honey, and vanilla together in a cup. In a bowl, crush the cookies with your fingers until they’re crumbs. Add the salt and the egg mixture, and combine well.
Add in the chocolate chips plus marshmallows to taste, and mix. Add the peanut butter, but don’t mix it thoroughly – just enough to swirl it around.
Cook it like a pancake – in a buttered frying pan on medium.
Dust with powdered sugar to make it pretty.
